Maple Pea-NOT Choc Oatmeal Bars

Ingredients

2 cups oats
1 cup all purpose flour
6 Tbsp Pea-NOT Butter, Smooth
1 banana
1/3 cup maple syrup
4 tbsp chia seeds
1 tsp cinnamon
1 egg
1 cup dark chocolate chips
1/3 cup coconut oil

Method

  1. Line a slice tin with baking paper and set aside. Pre-heat oven to 185 degrees (360F).

  2. In a bowl mix together the oats, flour, Pea-NOT Butter, mashed banana, maple syrup, chia seeds, cinnamon, coconut oil and egg.

  3. Add half of the chocolate chips to the batter and mix through

  4. Press the mixture into the lined slice tin then sprinkle with the remaining chocolate chips

  5. Bake for 20-25 minutes and allow to cool slightly before slicing.

  6. Store in an airtight container in the fridge
