Pea-NOT Butter Choc-Chip Lunchbox Cookies

Ingredients

1 cup plain  flour
1 cup Pea-NOT Butter, smooth
½ tsp baking powder
1 egg
1/3 cup butter or coconut oil
1 tsp vanilla extract
1 tsp cinnamon
½ cup brown sugar
1/3 cup maple syrup
½ cup chocolate chips

Method

  1. Line a baking tray with baking paper and set aside. Pre-heat oven to 185 degrees (360F).

  2. In a bowl mix together all ingredients until it comes together like a sticky dough. If it’s way too sticky add some extra flour

  3. Shape into cookies evenly on the lined tray, and press down with a fork

  4. Bake in the oven for 15-20 minutes until they come out light golden.

  5. Allow to cool completely then store in an airtight container.
