No Bake Lunchbox Protein Bites

Ingredients

1 cup rolled oats or oat flour
3/4 cup desiccated coconut
2 teaspoons vanilla bean extract
1 cup PeaNOT Butter
1 tablespoon maple syrup
1 tablespoon coconut oil, melted
Optional: 1/2 cup choc chips

Method

  1. Combine all ingredients (except the choc chips) into a food processer and process until a sticky mixture is formed. Add more PeaNOT Butter if it is too crumbly.

  2. Stir through the choc chips.

  3. Roll mixture into tablespoon sized balls.

  4. Store in the fridge or pop a few into lunchboxes for protein and energy filled snacks.
